VIVO, a seaside restaurant in Cayman dedicated to only using organic, sustainable and local produce, opened in 2015 at the Lighthouse Point Resort.
Their menu features only the best seasonal produce and housemade breads. VIVO also offers a great selection of vegan, vegetarian, gluten and dairy-free options. The invasive, but delectable lionfish is their choice of fish. In fact, the big Pan-Fried Lion Fish Sandwich is a hit with diners.
Organic wines, spirits or local beers can be enjoyed while you take in the dramatic Northwest Point coast. Fresh cold-pressed juices are made to order daily as well as a selection of fabulous coffees, teas and herbal infusions.
